Danger: Highly Addictive Recipe

Hello all!

I thought I would post a recipe of my own to spice up the blog and the winter season. Thus, I give you my simple but delicious:

Kickin' Black Bean Dip

You will need:

One 14 oz can of black beans (organic)
One 14 oz can on whole canned tomatoes (organic)
One 7 oz can of chipoltes (peppers) in adobo sauce
A small amount of dried oregano (organic)

Vegetarian Option:
You may want to add some grated low-fat marble cheddar into the mix.

Directions:

1) Open the can of black beans and give them a rinse with water
2) Place the beans into a frying pan set to medium heat
3) Crush the beans with the back side of a fork until you have a thick bean paste
4) Drain and dice the whole canned tomatoes before adding them to the crushed beans
5) Add 2-3 chipoltes peppers in the same fashion as the tomatoes keeping in mind that they are quite spicy and you may want to try the recipe using 2 peppers the first time around.
6) Finally add 2-3 healthy pinches of dried oregano into the mix, serve and enjoy!

As said above for a vegetarian addition you may want to include in some grated cheese yet it is not necessary. The dip will be very flavorful either way.

Serving suggestions:

I recommend using lightly salted nacho chips versus the usual "Tostito" brand as the dip is already salty from the adobo sauce. Here is the organic brand I usually use:

Happy dipping!
